- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 1 cup fresh blueberries (or frozen, if you prefer)
- 1 tablespoon milk (for brushing)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the cold, cubed butter to the flour mixture and cut it in using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually pour in the buttermilk and gently mix until a dough forms.
- Fold in the blueberries carefully to avoid smashing them.
- Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle.
- Use a biscuit cutter or a drinking glass to cut out biscuits. Re-roll dough scraps as needed.
- Arrange the biscuits on the prepared baking sheet, brush the tops with a little milk for a golden finish.
- Bake for 12-15 minutes, or until the tops are golden brown and the biscuits have risen beautifully.
- Let them cool slightly before serving with a dollop of butter or jam.
Notes
- If using frozen blueberries, do not thaw them before adding to the dough to prevent excess juice.
- For extra flaky biscuits, handle the dough as gently as possible and avoid overmixing.
- Make sure your butter is very cold for the best texture!
