Ingredients

Scale

  • 1 sheet puff pastry, thawed
  • ½ cup soft caramels, melted (or thick caramel sauce)
  • ½ cup chocolate chips or chopped chocolate
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon milk (optional, for extra shine)
  • ½ teaspoon flaky sea salt, for garnish
  • 2 tablespoons powdered sugar, for dusting (optional)

Instructions

  • Preheat & Prepare – Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Roll Out the Pastry – Lightly flour a surface and roll out the puff pastry into a 12×12-inch square. Cut into 6 equal squares.
  • Add the Filling – Spoon 1 teaspoon melted caramel and 1 teaspoon chocolate chips into the center of each square.
  • Seal the Pillows – Fold each square diagonally into a triangle. Press edges together, then crimp with a fork to seal.
  • Egg Wash & Bake – Whisk together the egg and milk. Brush over the pastries. Bake for 15-18 minutes, or until golden brown.
  • Cool & Finish – Let cool slightly, then sprinkle with flaky sea salt and dust with powdered sugar if desired. Serve warm!

Notes

  • Chill before baking – If the pastry gets too warm, refrigerate for 10 minutes before baking for flakier results.
  • Experiment with fillings – Try Nutella, peanut butter, or fruit preserves for a different twist!
  • Use high-quality chocolate – Semi-sweet or dark chocolate balances the caramel’s sweetness perfectly.
  • Storage: Keep in an airtight container at room temperature for 1-2 days, in the fridge for up to 4 days, or freeze unbaked for up to 2 months.
