Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). If not using a loaf pan, line a baking sheet with parchment paper.
  2. Prepare Meat Mixture: In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, Italian seasoning, paprika, salt, and pepper. Mix until just combined—avoid overmixing.
  3. Layer the Meatloaf: Take about two-thirds of the meat mixture and press it into the bottom of your loaf pan (or shape into a loaf on the baking sheet). Create a shallow well in the center.
  4. Add Mozzarella: Fill the well with shredded or sliced mozzarella cheese, keeping it away from the edges. Cover with the remaining meat mixture and press to seal the edges, fully encasing the cheese.
  5. Prepare the Glaze: In a small bowl, mix ketchup, brown sugar, and Worcestershire sauce. Spread evenly over the top of the meatloaf.
  6. Bake: Bake for 45–50 minutes, or until the internal temperature reaches 160°F (71°C). If the glaze starts browning too quickly, cover the loaf loosely with aluminum foil.
