- 2 cups diced potatoes (Russet or Yukon Gold)
- 1/2 lb breakfast sausage (or bacon, ham, or plant-based alternative)
- 1/2 cup diced bell peppers (any color)
- 1/4 cup diced onion
- 3 large eggs
- 1/2 cup shredded cheese (cheddar, pepper jack, or your favorite)
- 2 tbsp olive oil or butter
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- Fresh parsley or green onions for garnish (optional)
Instructions
- Cook the Potatoes: Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes, season with salt and pepper, and cook for 8-10 minutes, stirring occasionally, until golden and crispy. Remove and set aside.
- Cook the Sausage & Veggies: In the same skillet, cook the sausage until browned, then set aside. Add the remaining 1 tbsp oil and sauté onions and bell peppers for about 3 minutes until soft.
- Combine Everything: Return the potatoes and sausage to the skillet. Sprinkle with garlic powder and smoked paprika, then stir well.
- Cook the Eggs: Make 3 small wells in the mixture and crack an egg into each well. Cover the skillet and cook for 4-5 minutes, or until eggs are set to your liking.
- Add Cheese & Serve: Sprinkle shredded cheese over the top and let it melt. Garnish with fresh parsley or green onions, then serve immediately. Enjoy!
