Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with liners or lightly grease it
- In a large bowl, whisk together the whole wheat flour, baking soda, salt, cinnamon, and ground ginger
- In another bowl, beat the eggs, then mix in the honey (or maple syrup), melted coconut oil, and vanilla extract
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined
- Gently fold in the grated carrots, grated apple, shredded coconut, chopped nuts, and raisins
- Divide the batter evenly among the muffin cups, filling each about ¾ full
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely
