Description

This Ground Beef Stroganoff Recipe is a quick and creamy comfort food that’s ready in under 30 minutes! Made with tender ground beef, mushrooms, and a rich sour cream sauce, it’s the perfect weeknight dinner. Serve over egg noodles or mashed potatoes for a meal your family will love.

Ingredients

Scale

For the Stroganoff:

  • 1 lb ground beef (80-85% lean)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups sliced mushrooms (white button or cremini)
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • ½ cup sour cream
  • Salt and black pepper, to taste

For Serving:

  • 8 oz egg noodles, cooked according to package directions
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through. Remove the beef with a slotted spoon and set aside.
  2. Add butter to the skillet. Sauté the onion, garlic, and mushrooms for 5-7 minutes until the mushrooms are golden and onions are translucent.
  3. Sprinkle flour over the veggies and stir to coat. Cook for 1 minute, then slowly pour in the beef broth, stirring constantly to prevent lumps.
  4. Add Worcestershire sauce, paprika, salt, and pepper. Simmer for 3-5 minutes, allowing the sauce to thicken.
  5. Return the ground beef to the skillet and stir to combine. Reduce heat to low and gently stir in the sour cream until the sauce is smooth and creamy.
  6. Serve the stroganoff over cooked egg noodles and garnish with parsley if desired.

Notes

  • Use full-fat sour cream for the creamiest sauce and to prevent curdling.
  • Substitute Greek yogurt for sour cream if you want a lighter option.
  • Add a splash of extra beef broth when reheating to loosen the sauce.
  • For a gluten-free version, use gluten-free flour and noodles.
