  • 4 bone-in, skin-on chicken thighs
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil, divided
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry and season with salt, pepper, smoked paprika, and Italian seasoning.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken, skin side down, for 5–7 minutes until golden brown. Flip and cook for another 5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining olive oil and the halved potatoes, cut side down. Cook for 4–5 minutes without stirring to let them crisp.
  4. Stir in the minced garlic and cook for 1–2 minutes until fragrant.
  5. Return the chicken to the skillet, nestling it among the potatoes. Sprinkle Parmesan over the chicken and potatoes, then add small dollops of butter around the skillet.
  6. Cover with a lid and cook over medium heat for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are tender.
  7. Garnish with fresh parsley and extra Parmesan if desired. Serve hot and enjoy!

Notes

  • Swap baby potatoes for sweet potatoes for a slightly sweet twist.
  • Use boneless, skinless chicken thighs or breasts if preferred, but reduce the cooking time slightly.
