- 4 bone-in, skin-on chicken thighs
- 1 pound baby potatoes, halved
- 2 tablespoons olive oil, divided
- 2 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1/3 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken thighs dry and season with salt, pepper, smoked paprika, and Italian seasoning.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken, skin side down, for 5–7 minutes until golden brown. Flip and cook for another 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining olive oil and the halved potatoes, cut side down. Cook for 4–5 minutes without stirring to let them crisp.
- Stir in the minced garlic and cook for 1–2 minutes until fragrant.
- Return the chicken to the skillet, nestling it among the potatoes. Sprinkle Parmesan over the chicken and potatoes, then add small dollops of butter around the skillet.
- Cover with a lid and cook over medium heat for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are tender.
- Garnish with fresh parsley and extra Parmesan if desired. Serve hot and enjoy!
