- 1/2 teaspoon garlic powder (optional)
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 1 cup shredded sharp cheddar cheese (or preferred cheese)
- 1 large egg yolk
- 2 tablespoons cold water
- 1/4 cup jam or savory filling (fig jam, pesto, caramelized onions, etc.)
Instructions
- Prepare the Dough: In a mixing bowl, whisk together the flour, salt, and garlic powder. Cut in the cold butter using a pastry cutter or food processor until the mixture resembles coarse crumbs. Stir in the shredded cheese.
- Add Liquid Ingredients: In a small bowl, whisk together the egg yolk and cold water. Add to the flour mixture and stir until a dough forms. If needed, add a little extra water to bring it together.
- Shape the Thumbprints: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll the dough into 1-inch balls and place them on the baking sheet, spacing them about an inch apart.
- Create Indentations: Use your thumb or the back of a small spoon to gently press into the center of each ball, creating a well for the filling.
- Add the Filling: Spoon about 1/2 teaspoon of your chosen filling into each indentation, being careful not to overfill.
- Bake: Place in the preheated oven and bake for 12-15 minutes, or until the edges turn golden brown and the cheese is melted.
- Cool & Serve: Let cool slightly before serving, as the filling will be hot. Enjoy warm!
