  • 1 lb beef sirloin, ribeye, or beef tenderloin, thinly sliced
  • 2 tbsp butter, divided
  • 1 yellow onion, finely chopped
  • 8 oz cremini or white button mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup sour cream
  • 12 oz egg noodles
  • Fresh parsley, chopped, for garnish

Instructions

 

  1. Thinly slice the beef against the grain and season with salt and pepper. Set aside.
  2. Heat 1 tbsp of butter in a large skillet over medium-high heat. Sear the beef strips in batches until just browned, about 1-2 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining butter. Sauté the onion and mushrooms until softened and golden, about 5 minutes. Add the garlic and cook for 1 more minute.
  4. Sprinkle the flour over the onion and mushroom mixture. Stir well to coat. Gradually pour in the beef broth while stirring continuously to avoid lumps.
  5. Add the Dijon mustard, paprika, salt, and pepper. Bring the sauce to a gentle simmer and let it thicken for 5-7 minutes.
  6. Lower the heat and stir in the sour cream until fully combined. Return the beef (and its juices) to the skillet and let it simmer for 2-3 minutes until heated through.
  7. While the sauce is cooking, prepare the egg noodles according to package instructions. Drain and toss with a little butter if desired.
  8. Serve the beef stroganoff over the egg noodles and garnish with fresh parsley. Enjoy!

  • For extra creaminess, you can add an additional ¼ cup of sour cream or substitute with Greek yogurt.
