- 1 lb beef sirloin, ribeye, or beef tenderloin, thinly sliced
- 2 tbsp butter, divided
- 1 yellow onion, finely chopped
- 8 oz cremini or white button mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tbsp Dijon mustard
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup sour cream
- 12 oz egg noodles
- Fresh parsley, chopped, for garnish
Instructions
- Thinly slice the beef against the grain and season with salt and pepper. Set aside.
- Heat 1 tbsp of butter in a large skillet over medium-high heat. Sear the beef strips in batches until just browned, about 1-2 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the remaining butter. Sauté the onion and mushrooms until softened and golden, about 5 minutes. Add the garlic and cook for 1 more minute.
- Sprinkle the flour over the onion and mushroom mixture. Stir well to coat. Gradually pour in the beef broth while stirring continuously to avoid lumps.
- Add the Dijon mustard, paprika, salt, and pepper. Bring the sauce to a gentle simmer and let it thicken for 5-7 minutes.
- Lower the heat and stir in the sour cream until fully combined. Return the beef (and its juices) to the skillet and let it simmer for 2-3 minutes until heated through.
- While the sauce is cooking, prepare the egg noodles according to package instructions. Drain and toss with a little butter if desired.
- Serve the beef stroganoff over the egg noodles and garnish with fresh parsley. Enjoy!

- For extra creaminess, you can add an additional ¼ cup of sour cream or substitute with Greek yogurt.
