  • 23 tbsp Cajun seasoning (adjust to taste)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cream cheese, softened
  • 1 cup shredded Parmesan cheese
  • 1 lb pasta (penne, fettuccine, or preferred shape)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: Chopped parsley, grated Parmesan, or red pepper flakes for garnish

Instructions

  1. Prepare the Chicken: Rub chicken breasts with Cajun seasoning until evenly coated.
  2. Add Ingredients to the Crock Pot: Place the seasoned chicken, bell peppers, onion, and garlic into the Crock Pot. Pour in chicken broth.
  3. Cook the Chicken: Set the Crock Pot to low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  4. Shred the Chicken: Use two forks to shred the chicken directly in the Crock Pot.
