  • 6 slices of bacon (thick-cut preferred)
  • 1 medium onion (finely diced)
  • 3 garlic cloves (minced)
  • 4 large potatoes (peeled and cubed)
  • 4 cups chicken or vegetable stock
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper (to taste)
  • Fresh chives or parsley (for garnish)

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside on paper towels, leaving about 2 tablespoons of the drippings in the pot.
  2. Add the diced onion to the pot and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds.
  3. Add the cubed potatoes and pour in the chicken or vegetable stock. Bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are fork-tender.
  4. For a smoother texture, blend the soup using an immersion blender. For a chunkier soup, mash some of the potatoes while leaving others intact.
  5. Stir in the heavy cream and smoked paprika, then season with salt and pepper to taste. Simmer for 5 more minutes to meld the flavors.
  6. Ladle the soup into bowls, garnish with crumbled bacon and fresh herbs, and serve warm.

Notes

  • For a vegetarian version, skip the bacon and use vegetable stock. Add smoked paprika for a smoky flavor.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. If freezing, omit the cream until reheating to avoid curdling.
