For the Dough:

  • 2 ¾ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 packet (2 ¼ tsp) instant yeast
  • ½ tsp salt
  • ½ cup whole milk, warmed
  • 3 tbsp unsalted butter, melted
  • 1 large ripe banana, mashed
  • 1 egg

For the Filling:

  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract

For the Cream Cheese Glaze:

  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • 12 tbsp milk (to thin, if needed)

Instructions

  • Prepare the Dough: In a large bowl, whisk together the flour, sugar, yeast, and salt. In a separate bowl, mix the warm milk, melted butter, mashed banana, and egg. Gradually add the wet ingredients to the dry, stirring until a soft dough forms. Knead for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour or until doubled.
  • Make the Filling: In a small bowl, mix the softened butter, brown sugar, cinnamon, nutmeg, and vanilla extract until combined.
  • Roll & Fill: Punch down the risen dough and roll it out into a 14×9-inch rectangle on a floured surface. Spread the cinnamon-sugar filling evenly over the dough, leaving a small border. Roll the dough tightly from the long side and cut into 12 even rolls.
  • Second Rise & Bake: Arrange the rolls in a greased 9×13-inch baking dish, cover, and let rise for 30 minutes. Preheat the oven to 350°F (175°C). Bake for 20-25 minutes, or until golden brown.
  • Prepare the Glaze: In a bowl, beat together the cream cheese, butter, powdered sugar, vanilla, and milk until smooth. Drizzle over warm cinnamon rolls and enjoy!

  • For best results, use very ripe bananas for natural sweetness and flavor.
