Description

These Bacon and Cheese Egg Bites are the perfect grab-and-go breakfast! Fluffy, cheesy, and packed with crispy bacon, they’re a delicious way to start your day. Whether baked in the oven or made in the Instant Pot, they come out tender, flavorful, and super satisfying. Plus, they’re great for meal prep and freezer-friendly!


Ingredients

  • 6 large eggs
  • ½ cup heavy cream (or milk for a lighter version)
  • ½ cup shredded cheese (cheddar, Swiss, or Gruyère)
  • 4 slices of bacon (cooked and crumbled)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon smoked paprika
  • 1 tablespoon chopped chives or green onions (optional for garnish)

Instructions

 

Oven Method:

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or use silicone liners.
  2. In a mixing bowl, whisk together eggs, heavy cream, salt, pepper, garlic powder, and smoked paprika until smooth.
  3. Stir in the shredded cheese and crumbled bacon.
  4. Pour the egg mixture evenly into the muffin cups, filling about ¾ full.
  5. Bake for 18-22 minutes, or until set in the center and slightly golden.
  6. Let cool for a few minutes before removing from the tin. Garnish with chives or green onions and enjoy!

Instant Pot Method:

  1. Grease a silicone egg bite mold.
  2. Blend eggs, heavy cream, salt, pepper, garlic powder, and smoked paprika for an extra smooth texture.
  3. Stir in cheese and bacon, then pour the mixture into the mold, filling ¾ full.
  4. Add 1 cup of water to the Instant Pot, place the trivet inside, and set the mold on top.
  5. Cook on high pressure for 10 minutes, then naturally release pressure for 5 minutes before quick-releasing the rest.
  6. Carefully remove the mold, let cool slightly, then pop out the egg bites and enjoy!

  • For extra fluffiness, blend the egg mixture in a blender before cooking.
  • Dairy-free option: Use unsweetened almond or coconut milk and dairy-free cheese.
  • Customize it! Add spinach, diced peppers, mushrooms, or swap bacon for sausage.
